Serves 4
Ingredients:
- 1 tblsp Olive Oil
- 1 medium onion, diced
- 4 garlic cloves, minced
- 1 jalapeno pepper, seeded and minced
- 2 tsp ground cumin
- 1 tsp dried oregano
- 2 cups of vegetable broth
- 1 ½ pounds of tomatillos, peeled and quartered
- ½ cup fresh cilantro, chopped
- Salt and pepper
- Optional toppings- sour cream, avocado, cheese, tortilla strips
Instructions:
1. In a large pot coat the bottom with oil and add onion until sweat and soften.
2. Stir in the garlic, jalapeno, cumin and oregano. Cook for 1 min. Until it becomes
fragrant.
3. Stir in the broth and tomatillos,, raise the heat and bring it to a boil.
4. Lower the heat then allow the soup to simmer (20 mins) - until tomatillos are soft.
5. Remove from heat and stir in the cilantro.
6. Blend the soup, then return to pot.
7. Season with salt and pepper.
8. Serve with optional topping.
