SPICY CUCUMBER SALAD WITH SESAME DRESSING

Ingredients:
- 2 American slicer cucumbers, thinly sliced or spiralized
- 1/2 teaspoon salt
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon chili oil (adjust to taste)
- 1 teaspoon sugar or honey
- 1 tablespoon sesame seeds
- 2 green onions, sliced
- Fresh cilantro for garnish (optional)

Instructions:

1. Prepare the Cucumbers: Place the sliced cucumbers in a bowl, sprinkle with salt, and let sit for about 5 minutes.
This will help draw out excess moisture. After 5 minutes, pat them dry with paper towels. 2. Make the Dressing: In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, chili oil, and sugar until well combined.
3. Combine: Add the cucumbers to the dressing and toss to coat evenly.
4. Garnish: Sprinkle sesame seeds and sliced green onions on top. Garnish with fresh cilantro if desired.
5. Serve: Serve chilled as a refreshing side dish or appetizer.
