SNAP PEA AND MINT PESTO PASTA

Ingredients:
- 8 ounces pasta (your choice)
- 1 cup snap peas, trimmed
- 1 cup fresh mint leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup walnuts (or pine nuts)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: Extra Parmesan for serving

Instructions:

1. Cook Pasta: In a pot of boiling salted water, cook the pasta according to package instructions. Add the snap peas to the pot during the last 2 minutes of cooking. Drain and set aside.
2. Make Pesto: In a food processor, combine the mint leaves, Parmesan cheese, walnuts, olive oil, and a pinch of salt and pepper. Blend until smooth.
3. Combine: In a large bowl, toss the cooked pasta and snap peas with the mint pesto until evenly coated.
4. Serve: Serve warm, topped with extra Parmesan if desired.
