Ingredients:
- 1 pound green beans, trimmed
- 1 pound boneless, skinless chicken thighs or breasts, sliced thinly
- 1/2 cup cashews
- 3 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon ginger, grated
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil (optional)
- Cooked rice for serving
Instructions:
1. Prepare the Chicken: In a bowl, toss the sliced chicken with cornstarch, soy sauce, and rice vinegar.
Let it marinate for 10 minutes.
2. Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the
marinated chicken and stir-fry for 5-7 minutes until browned and cooked through. Remove and set
aside.
3. Cook the Green Beans: In the same pan, add a bit more oil if needed, then add the green beans.
Stir-fry for 3-4 minutes until they are tender but still crisp.
4. Add Garlic, Ginger, and Sauces: Add the garlic and ginger to the pan and sauté for 30 seconds.
Add hoisin sauce, oyster sauce (if using), and sesame oil. Toss everything together to coat.
5. Add Cashews and Chicken: Stir in the chicken and cashews, tossing everything together for an
additional minute until everything is heated through.
6. Serve: Serve the stir-fry over cooked rice!
