Ingredients:
- 1 pound green beans, trimmed
- 1/2 pound ground beef (or lamb)
- 3 medium potatoes, peeled and cubed
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed
potatoes and cook until golden and tender, about 10 minutes. Remove from the skillet and set aside.
2. Cook the Ground Beef: In the same skillet, add the remaining olive oil and the ground beef. Cook until
browned, breaking it apart as it cooks. Add the diced onion and garlic, and cook for an additional 2-3
minutes.
3. Add Spices and Tomatoes: Stir in the cumin, paprika, cayenne pepper (if using), and a pinch of salt and
pepper. Pour in the diced tomatoes and their juices, and simmer for 5 minutes.
4. Add Green Beans and Potatoes: Add the green beans to the skillet, stirring to combine. Cook for 10-12
minutes, until the beans are tender. Stir the cooked potatoes back into the skillet, and heat through for
another 2-3 minutes.
5. Serve: Serve warm as a complete dish.
