CUCUMBER AND MANGO SALSA

Ingredients:
- 2 American slicer cucumbers, diced
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced (optional for heat)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste

Instructions:

1. Prepare the Vegetables: In a large bowl, combine the sliced celery, shredded carrots, diced red bell pepper, peanuts, green onions, and cilantro or parsley (if using).
2. Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, ginger (if using), and a pinch of salt and pepper until well combined.
3. Combine: Pour the dressing over the salad and toss gently to combine, ensuring everything is well coated.
4. Serve: Serve immediately as a refreshing side dish or light lunch. This salad is great served chilled and can be made ahead of time
