Ingredients:
- 1 bunch celery, thinly sliced
- 1 cup shredded carrots
- 1/2 cup red bell pepper, diced
- 1/2 cup unsalted peanuts (or any nut of your choice)
- 1/4 cup green onions, chopped
- 1/4 cup fresh cilantro or parsley, chopped (optional)
For the Dressing:
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar (or apple cider vinegar)
- 1 tablespoon sesame oil (or olive oil)
- 1 tablespoon honey or maple syrup
- 1 teaspoon fresh ginger, grated (optional)
- Salt and pepper to taste
Instructions:
1. Prepare the Vegetables: In a large bowl, combine the sliced celery, shredded carrots, diced red bell pepper, peanuts, green onions, and cilantro or parsley (if using).
2. Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, ginger (if using), and a pinch of salt and pepper until well combined.
3. Combine: Pour the dressing over the salad and toss gently to combine, ensuring everything is well coated.
4. Serve: Serve immediately as a refreshing side dish or light lunch. This salad is great served chilled and can be
made ahead of time
