Ingredients:
- 6 celery stalks, thinly sliced
- 2 apples (Granny Smith or Honeycrisp), thinly sliced
- 1/2 cup walnuts, toasted or pecans
- Half of a red onion
- 1/4 cup raisins or dried cranberries
- 1/4 cup crumbled blue cheese or feta (optional)
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Prepare the Salad: In a large bowl, combine the sliced celery, apples, walnuts, and raisins or
cranberries.
2. Make the Dressing: In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
3. Toss and Serve: Pour the dressing over the salad and toss to coat. Add crumbled cheese if using, and
garnish with fresh parsley. Serve immediately as a light and refreshing side dish.
